Sometimes, it can be challenging to come up with low-carb ideas for lunch, so what are you having for lunch?

Had lunch at a Mexican restaurant today. Fried avocado slices appetizer and a few chips and salsa, unsweet tea with lemon.

Had deli sliced roast beef in a low carb spinach and herb tortilla and a diet A&W. Usually also have pork rinds and seasoned creamed cheese dip and a pickle, but opted out on those today.

Turkey hot dogs with sugar free ketchup and sugar free pickle relish--no bun. And a little bit of salad left over from last night.

A throw together meatball soup.

4 cups water.
3 chicken bullion cubes.
1 can Rotel diced tomatoes with chilies.
1 can regular diced tomatoes.
1 small bag frozen meatballs. These are small but will swell up as the soup cooks. I get the Kroger Homestyle or Italian meatballs
2 green onions chopped.

Simmer for 1 hour. I have also added zucchini spirals to mimic noodles. Most any vegetable could be added.

I get a few meals from this.

I usually throw together an Asian-inspired chicken soup with bullion cubes, canned chicken (unless we have the real thing as leftovers), and whatever vegetables we have in the fridge to use up (celery, onion, cilantro, string beans). I always add jalapeńo pepper and cilantro (they're always in the house) and some sauce or another.

This would be a nice break from that, though. And I always like a recipe I can reheat for another meal later!

Ob lunch: salad, as usual. Not sure of the protein on it yet, though.

In general I’ve got three possibilities

1. Coffee with an Atkins vanilla shake as creamer, along with a serving or two of habanero bbq almonds (3-5g net carbs).

2.Bacon burger casserole (carbs entirely depend on how much cheese I put in, but usually 4g for 2svg)

3. Omelette with bacon plus a little diced onion and green peppers and cheddar (estimate 6-8g).

Today...I’m feeling number 1.

Was thinking velvetta or some other franken cheese. Ooooh, now I'm interested. Loves a meat and cheese dish. Sounds good. What else is in it?

Well the beauty of a makeshift meal is that it's whatever's on hand :D Right now, I've got onions for omelettes and fresh salsa for a buffalo chicken salad that could add a little flavor without adding much in the way of carbs. As a dinner option, I'd probably add in onion along with some frozen peas and carrots (5g net carb/svg).

Speaking of beef, one thing I'll have to try is modifying my old Shepherds Pie recipe. Base was ground beef w/ frozen peas and carrots with worchestire sauce for flavor. That alone had decent flavor. The real carbs got added with a topper of mashed potatoes, which was then topped with a hefty layer of cheddar. Delicious...but potatoes aren't on the menu any more. Mashed cauliflower might suffice, but I'd probably be just as happy skipping the potato part all together.

I love some Shepherd's Pie! We have a recipe forum if you succeed in making a low carb version.

That sounds good.

I had fried bologna and cheese on a low carb wrap, salt and pepper pork rinds and Philadelpia cream cheese dip, and a pickle.

I had some leftover riced cauliflower so I made fried rice out of it. Some chopped ham, one egg, soy sauce, ginger and black pepper. A touch of sesame oil at the end. Washed it down with the last cup of black coffee and a Core Power chocolate shake.

5 grams of carbs for the shake and maybe less than that for the fried rice. The fried rice came out surprisingly good.

Went to town this morning for a car part and some groceries. BH was hungry and wanted to stop by Sonic on the way home. I had a footlong cheese coney with mustard and onions, no bun.

Red salmon out of the can, with a splash of lemon juice, Louisiana Hot Sauce, and a forkful of Mayo thrown in. 2 slices of Swiss cheese.

Leftover nachos from last night. Low carb tortilla cut up into 5 or 6 pieces and fried to crisp it. Topped with ground beef, cheddar jack cheese, jalapeño peppers, and sour cream. Put all the pieces together and it was as good as it was last night,
