Went to our new Costco and to Sam's today--they have different things! We brought home a rotisserie chicken and dived into it for lunch.

Fried bologna on a low carb spinach tortilla with mayo and cheddar. Pork rinds with cream cheese dip.

I guess you could retrograde some potatoes and put them cold into the soup just prior to eating. They would warm up some.

Roasting radishes, got to try that.

Fried bologna on low carb wrap, cheese, and mayo. Salt and pepper pork rinds with , homemade pimento cheese. Dill pickle. Green tea.

Been intermittent fasting last 2 days, breaking from that today because I need to finish off the venison summer sausage and Philly cream cheese dip. Going out to eat tonight to meet our new nephew in-law. Hope to keep dinner keto.

I went to lunch at a Mexican restaurant. I had a nice meat dish and had them hold the rice, beans, and tortillaso_O I skipped the cheese dip and chips, but had guacamole. Crossing my fingers that it was ok for my BG. I certainly tried.

Sounds like something I like that is called Molcajete for Two, but they will make it for one. A Molcajete is actually the stone dish they serve the meal on. It contains strips of fajita beef and chicken, shrimp, smoked sausage chorizo, sliced avocado, cheese, and a grilled jalapeño. I have them hold the rice, beans, and tortilla too.

I also like the tableside guacamole, made fresh at the table. The avocados are already halved but still in the peel, ready to be scooped out and chopped/smashed to your desired texture. All the other ingredients are mixed in right at the table

Another thing I get sometimes they call a queso fundido. Its queso cheese with chicken, beef, shrimp or a combination of any or all melted together. The cheese is soft and stretchy like mozzarella while its hot, but it fims up as it cools.

Sometimes I'll eat a few chips with the salsa, sometimes I don't. The meals don't seem to ding me too bad on BG. Yours should be OK, we'll cross our fingers for you too though.

It sounds similar to what I had. I really liked it.
t's a new place for me and seems to be popular with both the local foodies and with local Mexicans. I saw a shrimp dish and a liver and onions type dish that I want to go back for.
And no, it didn't ding me too bad! My BH is happy to find a place I'll eat even if it isn't a buffet;)

I made Turkey Carcass Soup from the bones of a smoked turkey. I had frozen them from a previous meal. I'll probably post in this thread more often since I rarely eat after lunch. It has been good for my blood sugar.

I put a roast in the crockpot early this morning with carrots, onions, and radishes. It really smells good!

BH has been prepping roast for the crockpot for the last half an hour. It’s not even Sunday.

Coincedence, I think not. Great minds think alike. But our timing is for Supper 😂😂😂

I gave in and let my husband take me to the Asian buffet close to our house. I've learned, mostly by trial and error, what I can eat there. They have a Mongolian grill--you can choose your ingredients and watch them cook it. Shrimp, vegetables, and egg with no sauce works for me.

I like those grills. I can load up with (good) veggies and meat. I've even asked for sauce on the side and dipped the meat and vegetable pieces in the little cup for some flavor without too much of a carb hit.

We used to have a Mongolian Grill about 40 miles away. I'd eaten there once and liked it a lot. It didn't survive the Covid lockdowns. We also lost a nearby Western Sizzler for the same reason.

We went to Golden Corral earlier this week and had a good lunch. I used to go there often, but it's been about 10-15 years.

I put a pork loin in the crockpot early this morning with olive oil, balsamic vinegar, garlic, and Italian seasoning. It turned out well.

Etherea, I'm using your recipe! Except instead of the olive oil I'm using soy sauce, instead of the balsamic vinegar I'm using Worcestershire sauce, instead of the garlic I'm using liquid smoke, and instead of the Italian seasoning I'm using salt.

I think I'll know in 8-9 hours which recipe I prefer. 🤣

We had pork loin for supper last night. BH quarters both the loins and puts them in the crock pot in the morning with a whole stick of butter, a package of Lipton Recipe Secrets Onion Mushroom, sprinkles in some Webster Garlic and Herb seasoning, and some chicken broth. When its time to eat that night, she just shreds it in the crockpot. Yep, leftovers here today too, but for supper/dinner. Edit: May put it on a Keto hamburger bun with some G Hughes BBQ sauce. One of the best pulled pork sammiches I ever ate.

First time we had it, we found the loins in a two pack, it was so good, but a couple of days worth of leftovers. Next time she was going to fix it, she bought a package with a single loin. At the time we didn't realize that loin and tender loin were not the same thing. We've made sure it was loin ever since.
