Premier Protein (Caramel)

Good grief, I gotta get out of this lazy stage.

I just grabbed a Premier Protein shake for lunch. (3 net carbs)

Chicken Salad

Although it isn't pretty (no picture of it) one of my favorite lunches (and what I had today) has become almost a comfort food for me.

Chicken Salad

4 oz Chunk White Chicken Canned (Sweet Sue)
2 Hard Boiled Eggs (Chopped)
1 Simply Pickles Kosher Dill Spears (Chopped)
2 TBLS Hellmanns Mayonaise

It has very few (if any carbs) and I really enjoy it. Sometimes I eat it over a bed of salad, but today, I ate it as is.

My Own Blended Protein Shake

Every now and then, especially when I am busy, I like to mix up my own blended protein shake.

It makes me feel full so that I can get by until dinner without needing to add extra snacks, etc.

2 Cups Unsweetened coconut/almond milk blend.
1 Scoop Protein Powder. (I use Body Fortress 100% Protein Isolate - 2 net carbs)
1 teaspoon Instant coffee.
2 tbsp PB2 powdered peanut butter.

I usually add a dash of granulated Splenda and cinnamon.

Smoked turkey sandwich: 3 slices of deli meat folded over a slice of smoked gouda cheese. That's all - very good and filling. If I had wanted to go to more trouble, I'd have spread the inside with mayo and put in a leaf of lettuce. But was being lazy today.

I've tried those Premier Shakes, tasted good but it spiked my BG. I do fine with Quest brand though.

Today for lunch I had a lettuce wrap(romaine) with homemade Caesar dressing, tuna, cheese, a couple olives and some hemp hearts and two small pickles.

can tuna fish
1/4 cup shredded cheddar
sprinkle of parmesian

I usually only use dressing when the lettuce/salad fixings are getting a little old.

OMG, I am such a pig! At 79, I eat practically everything I've ever eaten (except for pizza and alcohol) all my life. A1c was 6.3 last blood test. BUT, since going on the pump 30 months ago, I have gained 15 pds, due maybe to all the insulin I get now through the pump. Did so much better, glucose levels, with injection therapy, two insulins, and metformin. Oh, boy, how I miss the metformin.

Judyp, why blame it on the insulin pump? What are you eating that requires the insulin?

Dry Pizza (no sauce)

Fried up some hamburger and cut up pepperoni and stirred in some Parmesan cheese. Meanwhile, heated up a piece of pizza crust I keep in the freezer, melted provolone on it, and topped with the hot meat. Yum.

(no sauce because I didn't want to open a jar of spaghetti/pizza sauce just for one piece. )

Today, I had a big craving for a hamburger and fries from this place called Brenda's Burgers.

So, I went to McD's and ordered the #5 Artisan Grilled Chicken Sandwich with side salad instead of fries and Ranch dressing. All of a sudden I started to smell fries...LOL...I was really craving fries.

When I got to my office, buried under my Artisan Grilled Chicken was an order of fries...LOL! The Universe came through for me :)

SIGH...I threw them away :(

My lunch reminded me of Kraft dinner, so maybe I'll call it KD(keto dinner).

Basically, I took a can of 1 inch long, waxed beans yellow, and made a sauce for it using butter, franks hot sauce, and Greek feta dressing.

When I was stirring the sauce into the bowl, the beans really reminded me of KD noodle. I have to admit, the beans have a relatively bland flavor to them that easily takes just about any sauce flavor I can dream of.

This meal can be healthy or sinful, just by controlling the sauce.

for lunch I had left over chili I made the other day and threw in a big dollop of ricotta cheese so I would not get hungry. For dinner I had a whole bunch of kale fried in Kerrygold butter and EVOO (extra virgin olive oil) the kale greens really wilted down alot compare to what I started out with. So I added some Pecorino Romano cheese. It was yum is all that I can say. Now I am washing it down with some Tito's vodka. We'll see what my numbers are tomorrow morning. Stay tuned.

Gonna be slices of summer sausage, a couple of cheese sticks, pork rinds, and some Habanero spiced almonds. It will be a first for these nuts, I bet I don't eat the whole can at one sitting.
