I love country ham, grits and overlight eggs. I substituted cooked rice cauliflower for the grits and it was great. Next time I might try cheese cauliflower.

1/2 package peanut butter crackers and a bowl of homemade pickled cucumbers and onions. Coffee with splenda and sugar free creamer.

I scrambled some eggs with diced jalapenos and triple cheddar cheese. And of course coffee was involved!
