Picnic and Barbecue Foods. What do you take?
 
I'm wondering what others fix and bring for these picnics and barbecues. I need some good ideas.

I always take coleslaw made with Mayo, vinegar, artificial sweetener no one knows the difference. Also strawberries and blueberries with a can of real whipped cream.

I'm new at this, low carb thing, but I would suggest a veggie tray, with low carb dip. Or maybe a salad, with oil dressing. If your responsible for the meat, hamburgers or hotdogs, maybe fried chicken nuggets, with coconut coating.

Since Im the one giving the BBQs... I bring Ribs or chicken wings, prime rib, pork loin I let others bring the other stuff.

I bring a low carb low sugar BBQ sauce also. Cheese tray is a nice side also. Seems to be gone before the meat ever comes off the pit.

Retrograded potatoes salad is a must! If you have not learned how to retrograde do a search on this website....it is posted in several places....

Also, we recently retrograded some shell pasta and made a Tuna salad! I tested at 1 hr. 2hrs, and 3hrs...and saw little impact on my blood sugar......of course this is a salad that is cold, cannot be a warm salad....

I just looked this up - I had never heard of it. I am interested to try it and see my results. Definitely would be nice for a treat once in awhile. I will also look up the shell pasta.

I am not sure I ever saw a recipe for shell pasta tuna salad, retrograded. Others told me that Pasta could be retrograded using the same method as potatoes (some say rice also). Therefore we retrograded shell pasta and made a normal tuna salad recipe. Used no high carb ingredients, so it worked well...yum...yum...it was!
