I'm new at this too, just since February.

Breakfast right now is 2 slices of bacon, 1/2 avocado, 1-2 ounces of cherry tomatos, and an egg fried in the bacon fat. Somedays I add salsa, others italian seasoning to the egg. I sometimes have asparagas instead of the avocado. Plus of course my 2 cups of coffee with HWC.

I don't always do a proper lunch, if I do it could be a can of tuna on lettuce with celery, green onions, bell peppers. Or left overs from the night before. More often I snack several times on cheese, or nuts, or a pepperoni stick, salami, cheese "crackers", celery with cream cheese or peanut butter, or some yogurt with blueberries.

Dinner I grill something, salmon, shrimp, steak (usually I do several things then I have meat for several meals all ready). Or I fry or bake the meat and make lots of vegies, steamed or raw, maybe with a salad. If I make a recipe I usually make double so I have another meal out of it. I do a lot of stir fry asian style meals, my first hubby was Chinese, or Thai influenced, cooked in coconut milk with red or green curry paste.

Snacks are, nuts, cheese, apples w/peanut butter, CO fudge. At night I always have a snack before bed as that is when I take my second Metformin. Usually it is celery with cream cheese drizzled with marmite.

It ends up being somewhere between 30 -40 carbs a day.

I'm more low carb and medium fat. It just the level that tastes the best to me and that makes me feel the best overall. But definitely low carb 100% as it definitely brings my bg's into a good range.
