Hi Venu, welcome to the forum.

Do you test your own blood sugar? Can you test before you eat, one hour after and two hours after eating this. What does your meter read at those times? Depending on where you look, cooked quinoa is 20-26 grams of carbs in a 100 gram serving.

I could not eat this and keep my blood sugar down. I try to keep my BG below 140mg/dL (7.8 mmol/L) at all times. If it was me I would definitely keep the coconut oil and find a replacement for the quinoa

I'd specify the vegetables, too. Greens? Root vegetables? Peas and lentils? There could be far more grams of carbohydrates in there than we'd guess.

I haven't weighed the coconut oil I put in my coffee in a long time, but I guess I'm using close to 30 grams. It is not the fats in our foods that makes us fat, if that is what you are worried about.
