James, cheese is one of our good foods and normally will not affect your BG numbers. However, read all labels carefully as there can be additives that will raise your levels. Also, if you are eating LCHF, makes sure to eat cheeses with high fat content in relation to protein. The higher the fat percentage, the better. Processed cheeses are something I tend to avoid since they tend to have a ton of additives.

I've eaten those magic noodles, the ones made with nothing but insoluable fiber, seemed to not spike me, nor did I notice any major taste issues. Didn't taste like good old pasta, but texturewise they seemed good enough to have with some chicken.

Anything with wheat or grains in it will spike your bg. Cheese is a fat and in most cases will not spike your bgs. Since giving up all grains my bgs are pretty stable without spikes. You said your HbA1c was 5.0 in 2009, is it still that low? Have you been able to keep it that low eating high carb items like noodles?

If you're buying a commercial Caesar dressing, you'll need to look at the label to see what the fat, protein and carbohydrate numbers are. I use the Paul Newman one without any spiking.

you welcome james,
I reminded that my grandmother was diabetic too. She was also fond of cheese
and sort of food. Then she found a new solution. It was fresh cow butter.
(not margarine). Must try it.
