Diabetic Dessert Ideas?
 
Hi everyone, I am hoping some of you will have some interesting low carb dessert ideas. I have been having blueberries and yogurt for a few months now, but it's getting old and boring, not to mention tasteless. I'm looking for something simple, low carb chocolatey, nothing with expensive ingredients or hard to make. Any ideas?

Im sure there are plenty in the recipe area on the forum but if you want, google 'fat bombs' there are a lot of varieties. they are delicious

Or use your favorite search engine for keto chocolate desserts or mug cakes . I know there are some mug cake recipes in our Recipes forum.

I'll have a square of dark (73%) chocolate. It's only around 3-4 gms carbs for a good-sized chunk & it's great with coffee.

Note: Dark Chocolate, not Milk Chocolate, which is mostly sugar.

Except on special occasions, I won't have a regular dessert like a normal-sized slice of pie or cake. The rare times I do, I have to take extra insulin & I don't like to.

I have a Faux Strawberry Shortcake, w/no cake

I slice up 3-4 strawberries/ or a handful of blue berries or a few of both, pile them up and put a crown of whipped cream on top! I make the whipped cream ahead from whipping HWC with a bit of artificial sweeter...this all really is a good desert and you can make a small batch of it ahead and mix up a 'shortcake' when you want one.

Just a FYI: Even "Extra Creamy Sweetened" whipped cream has less than 1 gm sugar in 2 tablespoons. Really surprised me, considering how good it is.

Make the "shortcake" into a dessert crepe. Beat one egg until foamy, pour out into a hot small no-stick frying pan that has been spread with a fat. Tilt the pan in a circular motion to cause the egg to cover the bottom evenly. Cook gently until set but not browned.

Slip crepe out of pan to cool. Put the strawberries and some of the whipped cream in the crepe and roll up. Top with more whipped cream.

Drizzle some sugar-free strawberry syrup (i.e. Walden Farms)

Now there is a plan! Funny how quickly we all can get together on building a good menu...! It is not hard if you learn to eat LCHF...

I'm experimenting with almond butter bombs, with PB, one square of chocolate, cream chz and almond or coconut flour.

First efforts were too bitter so slowly adding Swerve sweetener and getti better.
