Default Cheese Cake

My wife has been planning to make me a cheese cake for quite some time. She had bought a spring form pan especially for the task and carefully made sure she had all of the ingredients. Today was the day for the big event! After it came out of the oven she tasted it and said it was terrible - the sweetener she used must have been bad! I asked her how much she used - she said she used 1 1/2 cups (liquid sweetener!). After she examined the recipe closer she noticed it said 1 1/2 cups of equivalent to sugar sweetener. Oh well, I gave her A for effort and gave her a big hug for the thought.

Oh, that's really sad!

Just here lately I've had two sweetener failures. I made gelatin, and forgot the sweetener entirely (senior moment!), and then made some sweet-n-sour red cabbage, and overdid the sweetener.

Too much.... too little.... = ugh!

I think we have all had our share of LC failures that ended up in the trash. I learned very quickly that too much sweetner doesn't work. Many recipes call for a 1:1 ratio, but I usually cut it in half. Also I find if you use 2 types of sweetner it works better. I usually use mainly Erythitol and then some splenda. Also what other substitutions did she make?

moderate exercise- mostly walking 3-5 miles, tennis - 4 hours per week, weight training, hiking on weekends and vacations 7-10 miles

Reading this is making me think I need a mother's day cheesecake, LOL!

I tend to UNDERsweeten desserts -- mostly b/c the ones with splenda always say TOO MUCH! I think about 2/3 of what is called for is perfect.

And that is in equivalent sweeteners. I use splenda syrup, plus Z-sweet or eryth. So it is still always b'guess and b'golly.

I also use the b'guess, b'golly apporach to cooking. Sometimes it works, sometimes it doesn't. Now I am craving cheesecake. I guess if I want one for Mother's Day I will have to bake it myself. I doubt my sons would bake one for me.

My wife is not a pioneer. She sticks to the recipes. This recipe needed three tablespoons of liquid sweetner, and she used 1 1/2 cups.

A quick follow up to let you know that my wife tried again, and the second one was absolutely wonderful!!!! I guess it had been so long since I had anything like that it was though I had died and gone to heaven! Wow! I hope I she keeps this up.....
