Default Almond flour

My husband made pancakes out of almond flour and then made fried chicken out of almond flour. Both times after eating these yummy items - I tested before and after and my blood sugar actually went down! I didn't think that was even possible. Too cool.

Hi! My husband made them for me - he is an amazing cook. He said he combined 1cup almond flour, 2 eggs, 1/4 cup water (for fluffier pancakes - use sparking water), 2 tbs oil, 1/4 tsp salt, 1 tbs vanilla extract. They were delicious! He said to keep an eye on them - because they don't bubble like normal pancakes.

I get mine at Trader Joe's. but I know some folks just put almonds in a food processor.

We buy almond flour at our local Food Lion - near the organic foods. It costs more than regular flour. I'll write back with the exact cost. Here are pictures of the last two things my husband researched and then prepared with almond flour. They were absolutely delicious and my blood sugar again - actually went down - after I ate them. The only time I have seen my blood sugar go down after a meal is when I eat something prepared with almond flour. Check out these photos. Delicious!

I tried the almond pancakes this morning. Tastes great, no affect on BG. I used half and half instead of water, added some sesame seeds to the last few cakes, and used butter on the pan. These cakes do show bubbles when ready to flip as shown in the large unflipped cake in the pan below. Thanks for the tasty idea.

Extra cakes were good as a carrier for cream cheese.

Oh, you gotta have almond flour. Lots of low carb recipes call for it. Diabetes Recipes

There are many places to buy it of course, but you can get 16 oz. of Bob's Red Mill Almond Flour at Walmart for about $9.

I wait until Blue Diamond almonds go on sale at Walgreens, but they also put their own brand on sale at that time, Nice brand, about $4.50 a pound. Even on sale, Blue Diamond is usually $1 higher. I stock up when they are on sale, grind them into a flour in the food processor and freeze them for later use.

Maggie, these pancakes sound yummy. Gonna give them a try. Thanks for posting the recipe.

Excellent! I'll post my husband's recipes for fried chicken, pizza crust and peanut butter cookies as soon as I can. Hopefully, this weekend. :0)
