Using heavy cream instead of milk will reduce your carb count, Bman. And using sour cream instead of buttermilk will reduce it even more. Bet you won't be able to tell the difference either!

Thanks for the tips Shanny -- I do you use cream in place of milk alot, but never thought to use sour cream in place of buttermilk.

I absolutely loved KFC's cole slaw...I will try that recipe Bman, but like Shanny suggested, I will replace the milk with cream and the buttermilk with sour cream. That will cut the carb count way down.

I might have to make that this week...perhaps for Friday since Lent begins Wednesday. Would make a nice side dish to some fish!

Also, I do miss the convenience as well of readymade stuff, but I know I'm eating healthier by knowing exactly what is going into what I'm eating. I just wish my darned digestive system would cooperate with me. I go for a while and everything is okay...and then boom! Suddenly my tummy is sore, and my whole system goes out of wack. I can't explain it. I wish someone could! Tired of living in and out of the small room (as Marty likes to call it).


Metformin - 2000 mg daily
Humulog - on a PING Pump now...
Zoloft - 100 mg
Milk Thistle
Alpha Lipoic Acid
GTF Chromium
Fish Oil - 4 grams a day
Vitamin D3 - 5000 iu daily
81 mg aspirin daily

And I just happen to have a package of cole slaw in the frig - first bag I've bought in oh ... a year? I must be prescient!

My dressing mix is 1/2 mayo 1/2 greek yoghurt, couple tbsp lemon juice. Seasonings. Perfect!
I'm British and we don't tend to sweeten things as much as the Americans so no need for Splenda :-) xx
