Default You'd think Low Carb would make Passover easy

But it doesn't. I can't use Carbquick, flax is questionable, no sesame, no peanuts.

Almonds are ok, as are walnuts.

Traditional foods are all carbs. Matzo, matzo balls, potato, potato starch.

Lots of eggs (ok) bacon is supposed to be a no no, but, pfft.

Do a search for low carb Seder. I found quite a few sites with some ideas and recipes.

Since I don't know much about Passover...would lox on optimist crackers be acceptable?

I wonder how many carbs manna had?

Wasn't the original Passover to be mainly lamb, with the freshly slaughtered animals's blood smeared over the doorway?

Perhaps a chat with your Rabbi is in order.

I have made the 70-second bread with these alterations: To the one egg, I doubled the flaxmeal and almond meal. Added about 1/2 tsp psyllium powder. (no baking soda). Spooned it out on parchment paper to make two flat rounds. Baked at 350F for about 10 minutes.

Makes a suitable unleavened bread. Holds together well and can be sliced in half.
