For one thing, it's all "low-fat"
Contains wheat.

And they counter all those carbs with very small portions as a serving. (.25lb of cod is one serving).

Fat-free MAYO??? Egg whites, only???? YUCK.

And yes WHITE flour, and any gluten ...

We could fix this, couldn't we?

We just have to keep trying to educate our doctors (or the people they hire to read reports for them as this article states)

And we could sure fix the recipe by replacing all the low-fat foolishness with normal fats, ditch the flour/panko, and then frying it in the skillet swimming in butter!

Swap low fat mayo for full fat, add butter, per Shanny, and coat in parmesan. That is what I do anyway. I do need to dredge in mayo, I'm going to try that tonight.

What the heck- panko for diabetics!?!!

Im feeling full already thinking about that deck of cards-size main dish portion. I might only be able to eat 2 oz!

One bite would do me in! For one thing, non-fat mayo packs sugar.

I believe this is the site where I once found my grandmother's favorite ( and decidedly non-diabetic) brownie recipe, so color me dismayed, but not surprised.
