I invented a new gluten- free, low calorie, low carb recipe this morning. Moi!! I just made one of these for my breakfast. Here goes: 1 1/2 tablespoons (level) oat bran. 1 dessert spoon of crushed sprouted linseed. A pinch each of Himalayan salt and mustard powder. About a quarter of an ounce of grated cheese. And a teaspoon of coconut butter. All beaten together with one egg. Baked at 200 in a muffin tin until it rose into a conical shape. Delish. Might try adding some ground almonds as well. Oh, I am on a roll.

I do something similar with 1 T of melted CO, 1/4 cup of flaxseed ( ground), 1 T of almond flour, 1/4 t of baking powder, pinch of sea salt, 1 T of chia seed. I mix an egg it and sprinkle seeds on top an pop in microwave for 2 minutes. Sometimes I've added cheese. Once in awhile I will increase the recipes and bake them in doughut pans for 15 minutes. So you get something like bagels.

Last year I saw a recipe for LC donuts that called for a donut pan. I couldn't find them locally but found them on Amazon. I also bought some muffin top pans which are nice to make LC rolls that you can slice. I just ordered some Oat fiber from Honeyville Grains and now am trying to figure out ways to use it. Maybe a few spoons in your recipe might be nice, too. When I cook LC, I feel like a mad chemist. I never make a recipe the same way twice.
