Now that I have the CO what am I taking it for? How much per day? Sorry to ask if this has been touched on before.

Many of us on LC diets use Coconut Oil as our main fat in our diets. Whenever a recipe calls for butter or fat, sub in CO. Also use it to fry all your eggs, veggies and meat in it. Check the recipe forum many of our recipes call for CO. You can also make a killer chocolate fudge recipe by melting 1/3 cup of CO, add 1/3 cup sweetner, 1/3 cup dark cocoa and stir until everything is mixed. If you want you can add peanut butter or chopped nuts. Pour everything in a plastic square container and pop in freezer. When you take it out break into pieces.

I made this earlier and now we're waiting for it to freeze. It was so good, had a hard time not eating it before it was frozen. I added a tablespoon of crunchy sunflower 'butter'

There are so many variations for this and it is so good. I some time add chia and whole flaxseed to up the fiber. It is a great treat when you get those chocolate cravings. I haven't done it but I think you can add some heavy cream to make it more like milk chocolate.

I know Coconut Oil is one of the only sources of Laurec Acid (sp?). That is what is found in breast milk and helps babies immune systems. I wonder if it has a similar effect on the brain, almost like a stem cell implant.
