Default Dinner experiment...

so going with the fried chicken theme....I took a bag of chichironnes(pig skin) and threw it into the processor with a 1/2 cup of Parmesan cheese and a about 3/4 cup of almond flour.

Whirrrrrrrrrrrrr...hmmmmm nice almost panko consistency. Smells a bit weird.

Took three boneless breasts and sliced each into thirds. Egg wash with a 1/4 cup of half and half and a couple of eggs. So nine pieces of chicken. Frying in lard and estimate that each piece of chicken will have about a gram of carbs each.

Maybe, probably less. 3 grams in a cup of AF and about 4 grams in a 1/4 cup of half and half. So 7 grams of carbs total. But used only about 2/3 of flour mix and less than a 1/4 of the wash. So I'm betting more like 4 grams into the 9 pieces or about 1/2 gr each piece. Will add SnP when cooking. Will try to post how they come out. Scott

Dang that was good!!! Highly recommend the use of pig skin for coating. Very. Dry good!!! Brussels great and salad was delish! Good meal had by all!

How did you cook the sprouts? I've always just boiled them, barely done.

Par boil for four minutes and set in strainer. IN same pan you par boiled them in put in a couple of three strips of chopped bacon, and a few cloves of sliced garlic and reduce bacon. Once crispy add them back into the pan and on low-med heat saute until crispy golden brown. Delish!!!!

use fatty bacon or add a bit of lard if needed.

I wonder if I can use frozen ones for this? The season for finding fresh seems over here.

Brussels sprout season will be starting soon in California - good news since probably you'll be getting them from us? When home and in season (all Summer and Fall), I get them on the stalks fairly fresh from the fields. Might be my favorite vegetable, next to spinach.
