Since I don't eat eggs, I find there is much else for breakfast. Do you do any LC baking? There are plenty of bread and muffin recipes in the Recipe section. They can be made up in advance, frozen, and you could grab one in the morning to have with your bacon, or have spread with cream cheese, or both.

There is a great "cereal" recipe that Shanny posted - mostly nuts - that's like granola that's real yummy. (beware of using plain milk on this as a cereal - real cream would be better).

My breakfast this morning is: hot cereal (see recipes for faux oatmeal, etc), a small slice of pumpkin pie that was baked yesterday (see Shanny's recipe for pumpkin pie), and a link of smoked bratwurst (which was already cooked, cut up in chunks and stored in the freezer).

Wow, that all sounds amazing! I had all but sworn off any bread or baked goods, just figuring I'd be better off. I came across some Diabetic cloud bread recipes on Pinterest, but dismissed them right off the bat. Now I'm wondering if I should do some baking this weekend! I think we might get snowed in again anyway lol
