He also eats more carbs than most of us would want to, especially when racing. I'd like to see a food log if he has kept one.

I don't see where his current consumption of carbs is listed - was this from someplace else? He mentioned his breakfast was eggs, salmon and avocado.

That was a breakfast on the second rest day during the tour (a day they didn't ride). In other articles on other websites that also included talking about that same breakfast, he talked about carb loading on race days and after races. I think that article was a little misleading because he is not full time LCHF. Without seeing a food log, I'm going to assume he is much higher carb than just that one article leads us to believe at least when racing and training. He might be LCHF in the off season, but I believe that is a short part of the year.

I haven't run across anything yet that is more detailed about his meals, but would like to.
