Default Forgotten Cookies?

I was just reminded of an old recipe I used to make for my mother that should be really good for us. Do you know it, or should I post it?

They are meringue cookies and I used to make them with pecan pieces and semi-sweet bits for her and I think the recipe should be easy to convert.

This is like the cheese pot Shanny thought of a while back...and oldie that can be a goodie!

Wife used to make them, I think she referred to them as mexican wedding cookies.

No, different...I'll post the recipe...I love Mexican Wedding Cookies...they have been my Christmas cookies...one of them anyway...

Here is a version...I made them without the cream of tartar...but this would improve them.
Low cal cookies...can replace vanilla with lemon, almond, orange extract for different flavours....each serving is 1/6 of recipe or about 4 cookies or add cocoa powder to make chocolate cookies.

Ingredients
1/2 cup egg whites (about 3)
1/4 teaspoon cream of tartar
1/2 cup Splenda
1/8 teaspoon salt
1 teaspoon vanilla
Directions:
Preheat oven to 250°. Arrange the oven racks so one is in the upper third and the other is in the bottom third of the oven.

Beat egg whites on medium speed of electric mixer until foamy. Add cream of tartar; continue beating until the egg whites hold soft peaks. Gradually beat in Splenda and continue to beat until the meringue holds very stiff peaks. Beat in vanilla extract. The meringue should be very smooth and have no sugar grittiness.

Line two baking sheets with parchment paper. I use my Silpats in my pans.

Spoon small mounds of meringue on the parchment paper.

Bake for 1 hour, rotating the baking sheets after 30 minutes. Turn the oven off and leave the door partially open. Leave meringues in the oven for 1 hour longer.( or over night)

Makes about 24 meringue cookies.

Total Carbohydrates 0.7g0%

I add 1 cup chopped pecans and would use chopped chocolate bar or 85% chocolate chips.

These melt in your mouth!

Ah, meringues! I used to make a dessert with those:

In a glass dessert bowl or wine glass
Layer of fruit salad (chopped up small) with a little orange juice
Layer of whipped cream with Bénédictine stirred into it
1 Meringue
More whipped cream and Bénédictine
Glacé cherry
Bénédictine poured over the top.
