Post Chicken with artichokes



sorry it is so big I can't seem to make it smaller from my photobucket. and it is is hit or miss when I post from my pc.

really easy chciken fix.
sauted chicken thighs for a few minute s till a little browned.
added whole pearl onions & 2jars of marinated artichokes.
45minutes later. delish dinner.

low carb. no sugar .cheap..

Oh nice! I have some boneless/skinless chicken thighs someone gave me that have been languishing in the freezer and this is perfect! No spices?

I just used salt/pepper/garlic on the chicken.
dumped in the 2 jars ,liquid too. the whole pearl onons where frozen lol. I don't measure so it was half a bag. gosh maybe 3/4 cup? thats it. you could add wine or chicken broth or even lemon & or zest. but it was good just the way I fixed it.

you can do it in the oven too. 325' 45 minutes.

Delicious, but ... didn't brown mine as much and it cooked in more juice so looked anemic. Added paprika (like a good Hungarian) for color and spice.

Will do this again. I love just dumping ingredients and coming out with a dinner!

I do that with most meats that are stir fried too. I like a bit of color on it lol when I see pork or chicken thighs just dumped in ,it looks un cooked. JMO..

I always for the most part SEAR! even when I do the slowcooker thing.

Oh good, another way to fix chicken thighs.

I like all the ideas. I'm thinking that some mayo added if baked in the oven would be good, also. I have used mayo as a substitute for dairy and it is really good.
