I married into a Sicilian/American family--and one of my favorite dishes made by my mother-in-law is frittata. It's basically an egg pie made in a frying pan on the top of the stove with various added ingredients. She makes it with bits of roast beef, a little sauted onion and parmesan cheese. I made a variation this morning:
4 eggs
1 chopped canned Ortega chili
6 black olives, chopped
4 slices pepperoni, diced
sprinkle of grated cheddar cheese
1/2 avocado cut into squares

Beat eggs with a fork in a small bowl. Add chili, olives and pepperoni. Pour into a greased (or non-stick) frying pan. With a spatula, lift up the edges all around the sides of the egg mixture, letting the uncooked egg mixture on top flow under the cooked mixture below. When the bottomside is cooked, put a plate over the top, tip the mixture upside down onto the plate, then slide the topside onto the pan surface to cook for a minute or two. Slide the cooked pie onto a clean plate, add grated cheese and avocado. Can be sliced like a pie into 5 or more slices. Makes a nice breakfast--or could be lunch or dinner with a side salad. Buon appetito!

I've shared one over breakfast at one of
our Italian restaurants and it is filling , rich

I'm still getting the 'page not available' with your pictures, but thanks so much for the recipe! I like the idea of not having to put it under the broiler with yours. Now to wait impatiently for a guest or two to help me eat one. Meanwhile I'll have to try the idea in an omelet soon!

Posting thumbnails is preferred for pics and here's how to do it:

When in posting mode, scroll down to ‘Additional Options’ and click ‘Manage attachments.’ Then ‘Choose File’ and select the pic from your computer (or enter a URL for the pic) and click ‘Upload’. Close the window and then you’ll have a thumbnail of the pic.

Took me a while to get the hang of this too!
