Almond Cheese Muffins

6 muffin tray. Oven at 350F/180C. 3.03g of total carbs per muffin.

2 cups/270g almond powder/flour (I get the raw powder one by SUMA 4.9g carb per 100g)
half teaspoon fine sea salt
1 teaspoon baking powder
1 cup grated Parmesan raw cheese
good pinch of cayenne
3 medium or 2 large eggs
quarter cup/60ml olive oil

Mix all together, if dry then add another egg yolk. Spoon into muffin case. Cook for 35 to 40 minutes (your oven may be different so check at the 35 min mark). Best served slightly warm.

Like the parmesan cheese and will try it.
I havent found almond flour over here, but will use almonds.

That is what I use ground almonds. Different countries, different labels, still almonds though ;-)

Oh Judy! Thankyou so much. These are the most muffiny bready things I have had since starting LCHF and I just love them. I am thinking of putting some chopped walnuts in next time. Tonight I cut one in 3 slices and put butter and chees on them them microwaved them to melt the cheese. Let them cool slightly and sooooooooooo yummmmmmmmmmmm.

My first batch is in the oven right now, though I made mini-muffins (~1/2 size) so they'll probably cook faster.

for your almond cheese muffins. I was hanging out for something "bready" so I mixed up a batch but added a handful of psyllium husks which meant a little more oil and egg. Baked in a slice tin. When cooked it was about the same as a slice of foccacia in depth so I could split and butter it. I was in Heaven.

I don't know how I missed this recipe the first time around!! I just made a batch, I didn't have raw parmesan, so I used pecorino romano cheese. YUM!!! Thanks Judy!
