I make mine every week or so.

fresh made is not that same junk you get a bottle/jar.

I have been making it for yrs. At first,it seems odd because it is yellow not pasty white.

I make 1 cup & it will last 5 to 7 days.

1egg
salt
1/2t apple cider V
1 & 1/2T fresh lemon juice
1/2t dijon
dump this in the food Processor
mix for a second.
then add 3/4 cup good Olive oil thro the hole in the top.

mine gets thick in about 2 to 3 minutes.

It will have olive taste if you use a heavy olive oil.

I have not bought jarred Mayo in yrs.
