Lemon Fat Bomb (8 servings)
 
I posted this when I first concocted it, but the recipe has evolved a little, so am posting with the changes. I am also including a link with reviews by people who have tried it.

Lemony and yummy.

Lemon Fat Bomb
(8 servings)

1 ounce cream cheese, room temp.
2 tablespoons butter, room temp.
2 tablespoons coconut oil
1 tablespoon sour cream OR yogurt
2 teaspoons lemon juice
1/8 teaspoon lemon extract
sweetener to taste

Stir together the cream cheese, butter and coconut oil. Add the remaining ingredients and stir until smooth. Drop by tablespoons into paper mini muffin cups. Freeze or refrigerate until firm. (They are good either way.)

Finally got around to making these today. And boy are they Yummy!!! I made a double recipe and put it into my fancy ice cube molds. It yielded 14 pieces. Having 2 now for dessert! :D

I think you are my new hero. I made these today and oh my! They remind me of the lemon icebox pie my mom made when I was growing up. Since that consists of lemon juice and sweetened condensed milk frozen in a graham cracker crust, I never thought I'd get to enjoy it again. :vs_no_no_no:

Totally into this recipe!
Glad you pop this thread or else I would not know about this amazing "bomb".
