Default "Buddha Meeting" Lemon Cake

A fellow Buddhist gave me this recipe a decade ago and it's been passed around between our members over the years. Whenever we have a Buddhist meeting this cake invariably appears because it tastes wonderful and its so easy to make. Of course I can't have it now but I decided to tweak it.


Disclaimer: I have 'dyslexia with numbers' so I find it easier to just to throw ingredients together. I never measure.

I use a springform pan. Grease the bottom or use baking paper.


Almond Meal - enough to make a base like a cheesecake.
50g of butter or thereabouts
1/2 cup of equivalent sweetener. I throw in a fair amount of Natvia (Stevia and Eryt.)
1 egg

Put aside about a 1/5 of the almond meal mixture. Mix together the rest of the almond mixture and press into the base of the pan and try to make it slightly thicker around the edges.

Place in oven (170C or 350F?) for 15 mins. Take out and prepare lemon filling.

Lemon filling:

Place 1/4 cup lemon juice (I use 1 lemon), 1/2 cup of equivalent sweetener, 50g chopped butter and 1 lightly beaten egg in a small saucepan. Stir over a low heat until mixture thickens. This doesn't take long.

Pour over almond base. Crumble the left over almond mixture around the edges on top and put pan back in the oven for 20-30 mins depending on how big your springform pan is.

Serve cold with whipped cream.
