Zucchini Parmesan Bites

I'm not sure if this has been posted here already, but a fellow forum person, who I am also friends with on Facebook, posted this to facebook and I just thought I'd share. It sounds (and looks) really wonderful.

Zucchini Parmesan Bites.

Ingredients
4 medium, fresh zucchini, sliced in half
1/2 cup fresh Parmesan cheese, grated
1-2 tablespoons fresh rosemary & thyme, minced
smidge of olive oil
salt & pepper to taste
Directions

Pre-heat oven to 350F, lightly brush both sizes of the zucchini with olive oil and place on a foil-lined baking sheet. Mix cheese and herbs together in a small bowl and sprinkle over the zucchini along with salt and pepper to taste. Bake for 15 minutes and place under the broiler for the last 3-5 minutes until cheese is crispy and browned.

Those would be okay, Morton . . . fresh would be better, but hey! ;) If you would like to try fresh, there are often little packages of fresh herbs in the produce department. Even here in the backwoods of the Ozarks I can find these, so if you're in a large metropolitan area, I have no doubt fresh is available in not-too-big quantities. But the spice aisle is fine too - just crumble them between your fingers as you add them so as much flavor & aroma is released as possible.
