Default Baked Beans

This is good. I didn't time it, but it takes a while to cook the beans until they are tender enough, but worth the effort.

Baked Beans

1 can black soy beans
2 strips bacon, chopped
1/4 cup onion, chopped (optional)
1/2 cup green pepper, chopped
1/2 cup salsa or picante sauce
1/4 cup sugar free maple or pancake syrup
1/2 teaspoon garlic powder
1/2 teaspoon liquid smoke

Cover and simmer the beans until soft, stirring occasionally, adding a little water as necessary.

Sauté the bacon, onion and green pepper until the bacon is browned and vegetables are tender.

Add the remaining ingredients, cook and stir until heated through.

Holy cow . . . this is going in the oven just as soon as I can put it together! Sounds terrific!

My heart skipped a beat when I saw the post 'Baked Beans'. I used to buy large tins of Heinz baked beans in ham sauce and have them on slices of toast (with low fat margarine of course!).

I've never tried black soy beans - can you tell me how many carbs?

If you're eating them Gizmo they obviously don't spike you.

The recipe sounds delish but I'm wondering about liquid smoke - what's that?

Oops . . . no oven! My head must be spinning so fast I missed that!

Freya? I use the canned black soybeans, and while I can't eat them with impunity, if I'm careful of portion control, I do tolerate them.

Soy beans are different than black soy beans, they have less carbs. I use Eden brand. 1/2 cup serving has 8g carbs, 7g fiber and 1g sugar.

Liquid smoke gives a barbeque flavor, comes in a tiny bottle in the aisle with soy sauce, barbecue sauce and such.

This really looks good!! I have dinner planned for tonight, but tomorrow this is going into my little crock pot to simmer all day!!

Freya, black soy beans are the only beans I can tolerate. And I have to stick to the 1/2c or less serving size. I make my chili with them and get about 5-6 meals from a recipe.

Oh! It's very good, folks! I may have overdone it a little with the WF pancake syrup because OWC likes his baked beans pretty sweet, but it was more than offset by the salsa. This is a terrific recipe - I hope I'll be able to exercise proper restraint at the table!

Full disclosure: I was so confident of Joyce & her skills that I jumped in with both feet & doubled the recipe right out of the gate! heheh!

I know the feeling ... we do that with several of yours. Your breakfast mix and steak soup are always doubled, along with several others.

- This recipe above looks good. I need to omit the onion but it still sounds delicious. Heading to the store tomorrow, will pick up the ingredients.
