My Daughter bought herself a diabetic recipe book. She said since Diabetics eat healthier, it would be better for her. She said I could borrow it if I wanted some recipes from it. Lovely Child.

There is definitely a lot of Yummy and easy recipes in it including many Good meat recipes and also salads and many other types.

Chocolate Peanut Bars

Makes: 24 2 1/4" x 1 1/2" bars
Serving Size is 1 bar

Prep Time: 10 minutes
Cooking Time: 3-5 minutes
Chilling Time: 1 hour
-1/2 cup light corn syrup
-2 Tbsp. brown sugar blend(Splenda)
-dash of salt
-3/4 cup chunky peanut butter
-1 tsp. vanilla
-2 cups crispy rice cereal
-1 cup cornflakes, slightly crushed
-1/2 cup chocolate chips

1. Combine corn syrup, brown sugar blend, and salt
in a heavy saucepan. Bring to a boil.
2. Stir in peanut butter. Remove from heat.
3. Stir in remaining ingredients.
4. Press into a buttered 9" x 9" pan.
5. Chill for about 1 hour before cutting and removing
from pan.

1. This recipe can be easily doubled for a larger quantity.
2. It's a nice no-bake treat during the hot summertime.
