Default Eggplant Eggs Benedict

So I've been trying to mix it up for breakfast and I started making Eggplant Eggs Benedict for one.

I make it simple by frying a slice of eggplant in butter as a substitute for the English Muffin, along with a couple of slices of Canadian bacon. Then poach an egg and put a thin slice of whatever kind of cheese I have on hand. Surprisingly, the eggplant has a nice texture and it soaks up the butter nicely.

You know, the first day I made this I made the hollandaise sauce just like that but worried about not having pasteurized eggs. Our store doesn't carry them. So I opted for the poached agg alone, but now I realize that the runny egg yolk isn't cooked all the way through and I've been just fine all week, so I'll go back to this recipe.

You can self-pasteurize the eggs--there are instructions on the net. But we buy pastured eggs from local farms, and I don't worry about them at all because the chickens are not raised in overcrowded environments on questionable feed.

Tomato slices are another good "benedict" option.
