Hi X. Just an idea: I buy a dozen eggs pretty much every week. On Sat/Sunday I boil 10 or so, peel them, and leave them in an airtight container and pull them two at a time for breakfast. If your driving you can have them as-is. I put two in a smaller container with 2-3Tb salsa and eat them once I'm at work.

I've also done a quick scramble in the microwave and eaten it with my hands, or again, with salsa once I land at the office.

There have been occasions where I sub raw celery, radish, etc. for the salsa. The hard boil eggs and raw celery could easily be eaten in the car without mess.

Note I do sometimes keep the breakfast sandwiches in my freezer, as well. But that is a "last-ditch" I ran out if precooked eggs" option.

This is what I did... I fried a half-dozen sausage patties, then arranged them in the bottom of a casserole pan. I then beat six eggs with chopped red pepper and green onion and a splash of water, poured the mix over the sausage, then layered sliced cheddar cheese on top. (I didn't have the patience to grate the cheese.) Half hour in the oven at 350C, came out quite nicely -- I cut the result into six pieces and had one for breakfast this morning (took it to work and nuked it for 30 seconds in the microwave).

@VHM1: I don't have a car... and I can't boil eggs to save my life -- every time I try, I wind up having to throw away half of them, so I gave up. Sometimes I get the pre-cooked hard boiled eggs from the supermarket deli, they come in convenient packages of two. But lately they have lost their appeal.

Since I do not own a microwave, what I've been doing is taking some of my breakfast casserole to work and nuking it there before the start of my shift (while I also make a cup of tea). And people have been commenting favourably on it.

This weekend, I will try making it with bacon instead of sausage.
