Cream Cheese Pancakes.
 
I had these for lunch today and i absolutely love them. I posted about these a while back but realized I never put the recipe here. There are a lot of pancake recipes using some kind of substitute for flour but these have none. Only cream cheese and eggs. About as low carb as you can get. They are light and delicate and do well with lots of butter and I use Walden Farms sugar free pancake syrup.

I'm not sure where I got this recipe but it has become one of my favorites.

Cream Cheese Pancakes
Yield: Four 6-inch pancakes
Serving Size: 1 pancake
Ingredients
2 oz cream cheese
2 eggs
1 packet stevia (or any) sweetener
1/2 teaspoon cinnamon

Instructions
Put all ingredients in a blender or magic bullet. Blend until smooth. Let rest for 2 minutes so the bubbles can settle. Pour 1/4 of the batter into a hot pan greased with butter or pam spray. Cook for 2 minutes until golden, flip and cook 1 minute on the other side. Repeat with the rest of the batter. Serve with sugar free syrup (or any syrup of your choice) and fresh berries.

Approx nutrition info per batch: 344 calories, 29g fat, 2.5g net carbs, 17g protein

I get 3 pancakes from a batch so maybe mine are closer to 8". I put coconut oil in the pan and it helps. They are delicate so you have to cook well before flipping. I slather with plenty of butter and Walden Farms Sugar free Pancake syrup. Quick and easy in my Ninja blender. It's only eggs and cream cheese so very low carb and tastes great.
Oh yeah, serving size for me is the whole batch. I don't know where they got their nutrition info but I use Philadelphia Cream Cheese at 1g/oz. so about 3g carbs for the batch.

I used to make these all the time!! I just have gotten away from them. I need to get back!! I use 1 egg, 1 oz of cream cheese and will add spices like cinnamon or cardamom to the batter. (Mix in Magic Bullet.) I make basically a crepe. I roll blueberries or blackberries up in the crepe and top with homemade whipped cream or WF syrups and whipped cream!!

Now that I can eat a little apple, I think tomorrow I will slice a bit of apple and have a cinnamon apple crepe with whipped cream!!

I'm having these for breakfast RIGHT NOW, and they are amazing! Mine came out weird shaped and a little thin, but so tasty. I mixed a little cinnamon and Splenda into some sour cream and put that on top. Made my morning! :)

I tried to find this recipe Easter morning when the kids asked if I would make pancakes for breakfast. My search wasn't working right so I never did find it until just now. I remembered the eggs and cream cheese but thought there was baking powder or b. soda too. I added 1/4 tsp each. I don't use artificial sweetener and my meter says "no" to fruit. So I slathered them with melted butter and sprinkled cinnamon over all. They were absolutely delicious. And my friend who is allergic to nuts liked them as well. It's amazing what just a couple of simple ingredients will do.

Without the cinnamon in the mixture these would make lovely crepes, say wrapped around asparagus with Shanny's Hollandase sauce and some ham or bacon.

For any of the wrap type things that are usually made with flour these would be wonderful, perhaps with various herbs/spices mixed in. They are so easy.

I wonder how they would freeze. Could maybe be made ahead in quantity and pulled out as needed. Could've use one for my quesadilla last night had I thought of it.

Well, you are certainly more creative than I am and I never thought about using them for anything but pancakes but I think you may be onto something here. Without the sweetening and cinnamon they may well make a really good wrap. Something I am going to have to try. Thanks.
