Default Southern Seafood Chowder

Here is one for those cold winter days

Recipe Name: Southern Seafood Chowder

Estimated Prep Time: 45

Ingredient List and Amount used: 2 heads of cauliflower broken into small pieces
1/4 cup of coconut oil
1 stick of butter
1 cup of heavy cream
1 cup of sour cream
4 oz of cream cheese
1 pound of peeled shrimp
2 cans of minced clams
2 cans of crab meat
3 stalks of celery
1 large green pepper
1 large Poblano pepper
3 Jalapeno peppers
1/2 half sliced red onion
2 cloves of garlic
Spices, Cumin, Thyme, Oregano, Paprika, red pepper, Sage, Parsley, salt and pepper

Recipe instructions: In a cake pan melt the coconut oil and spread out all of the vegetables except the celery. Roast uncovered for 30-40 minutes or until fork tender. You can place a loose foil top if the peppers are beginning to get to brown. In a sauce pan place half of the butter and simmer the celery until slightly soft, add in all of your spices, then the shrimp, when the shrimp is cooked add in the clams, crab meat and the smoked sausage, let simmer. Remove the cauliflower from the oven and place in a food processor or blender, add in the butter, cream cheese, sour cream, heavy cream, salt and pepper, blend on high until smooth. Pour into the sauce pan and stir well. simmer for a few minutes before serving.

General Comments : You add in more or less jalapenos according to your taste and sense of spice.

i'm not fond of cauliflower, think I'll make this brocolli and replace the clams with crawfish (if I can get them).

I'm not much of a fan of cauliflower myself. When you roast it in this manner along with the peppers, onions, garlic most of the unwanted cauliflower taste goes away. I think you would be surprised how it comes out. I would most certainly do it with crawfish

I've seen both Walmarts near me carry crawfish in the frozen seafood section. Hopefully you have a Walmart near you.

Yeah those crawfish are from China, not Louisiana and they add stuff to their crawfish that I would not eat. Walmart keeps the real deal behind the counter (you have to ask for them) and you pay a heafty price for them.

Now Sir Marty . . . yes, you sitting over there on the Eastern Seaboard with all that abundant seafood . . . you need to send me a care package! I had shrimp in the freezer but made scampi outta that the other night. Gotta go to town today since Vicky sez we have 6" of snow coming tonight/tomorrow, so I'll try to get as much stuff as I can - and let the bank account take its lumps.
