Default Skillet Pizza

My dinner tonight – Skillet Pizza!!! | Healthy Low Carb Living

Made this last night and it was awesome!! The only thing I did differently was that I sprinkled on quite a bit of Italian seasoning blend onto the cheese. The bottom got quite dark but had no burnt taste. Next time, I think I will saute a little bit of red onion, green pepper and fresh mushrooms and sprinkle them on as well. Yay for easy low carb pizza!

That crusty cheese has to be the most delicious platform - possibly better than carby crust - and especially mozzarella! Will have to get some of this going on over here! Thanks, Cap'n!

It really was better to me than actual bread crust! I marveled!

We ate at Denny's yesterday and I asked them to make their Hearty Breakfast Skillet without potatoes. Everything else in it is fairly low-carb, at least in the proportions they use. At any rate, they sprinkle the cheddar over those sizzling skillets and it crisps up nice & brown - I spent the first five minutes loosening all those wonderful crispies & eating them first!

You'll save a few carbs if you buy a brick of mozzarella and grate it yourself . . . the pre-grated bags are dusted with potato starch or some other carby product that keeps the cheese from clumping, but it isn't nice to our blood sugar.
