I've only ever made guacamole with avocado. I keep seeing a picture of an avocado with an egg in the center. It looks good. I was wondering what happens to an avocado if it is cooked. has anyone tried it?

I've never tried it, but I think it must be a good thing . . . I have a friend in Houston whose favorite Mexican restaurant offers a stuffed avocado. Stuffed with a seafood filling, the halves stuck back together and then breaded & deep fried. Sounds like heaven to me!

I make guacamole, but I also can't wait sometimes, and I just eat my avocado with a spoon right outta the shell with only a dash of salt.

I've grilled a few. Have to be careful with them as the fat content leaves them prone to melting or burning.

But if you can get it right a grilled avocado with a bit of margarita salt and lime juice is better than almost anything

Well I halved the avocado and broke an egg into the seed cavity, sprinkled with salt and pepper and microwaved it. The avocado was smallish and the egg was the smallest in the box of extra large. So most of the white ran out into the bowl. If I do this again I'll know to butter the bowl first. The white part was not the most pleasant bit and stuck to the bowl and kind of browned in spots. But the avocado and yolk were rather tasty. Tomorrow I'll make an omelet and put the avocado in or on it with some sour cream. Got to fuel up for the long drive.
