I'd like to know the answer to that question, too.

What I use to score the dough is the edge of a rubber spatula. The dough doesn't stick to it.

I use the silpat and have no issues. I guess if I pushed hard enough I would, but I find it so far safe and it's been a couple of years. I still have to 'crack' them apart when I turn them but not a problem.

I made three batches yesterday. (I had been out of crackers for a week and was getting desparate!)

One batch with dried diced onions.
One batch with Tamari soy sauce (with extra sesame seeds)
One batch with vanilla and some sweetener

Now I'm in seventh heaven!
