This recipe will fill 2 baking trays and if you cut each baking tray in 10 pieces, each cracker is 1,44 carbs. Both the baking trays is in the oven at the same time.

100 gram almonds
200 gram sesame
50 gram flaxseed
1/2 ts salt
2 topped ss Psyllium hulls
1/2 liter cold water

I put the almonds in my Food Processor and chop them really fine. Then I mix everything in a bowl just using a spoon. Leave it for 5 minutes to make the Psyllium hulls to swell.
I set the oven on 160 degrees celcius hot air.
I put baking paper in 2 baking trays, and lay half of the dough in each baking tray.
I use a spatula to make the dough cover all of the tray. I use a pizzacutter to make 10 pieces in each tray.
I put both of the trays in the oven at the same time using hot air. After about 45 minutes I take them out, seperate the crackers and turns them. Then I put them back in the oven again, but now I have the ovendoor slightly open.
After about 45 minutes the crackers are dry all through and really crispy.
I let them cool on a grate. When they are cooled, I put them in a closed box, and they will stay crispy and tasty for more than a month (mine always been eaten at that time).

Then as I read it, it would be as below:

4 oz almond meal (3/4 c. almond flour)
7 oz sesame seeds (1c. sesame seed)
2 oz flaxseed (3/4 c. flax seed)
1/2 t. salt
2 soup spoons of Psyllium Hulls ( 2 T.)
2 c. water

Bake at 325 degrees....etc.

Does this sound correct? I wish I had the sesame and Psyllium on hand to try this right now!

This recipe looks so good. I don't have a food processor. Is there anything that can be substituted for it? It has been sooooooo long since I enjoyed more than a "whiff" of a cracker :)

People who doesn`t are diabetic or need to think about their health also loves those crackers.
Strawberry: I think you can use a rod mixer, or an electric coffee grinder if you don`t have a food processor.
Or you can do it the old fashion way, use a hammer:rolleyes:
I`ve never tried using bought almond flour (I think sells it, but I`m not sure. Here I can buy it in stores for healthfood).The bought almond flour is much finer flour than if I just use the food processor. I like to have it coarsely ground, but you can try with finer flour.

Just when I think I know all of the ingredients that are used in low carb recipes, you guys come up with things I've never heard of before like chia seeds and psyllium hulls. I figure you get the psyllium hulls from the Whole Foods store or Netrition. There is no whole foods or health food store anywhere near here. I doubt it, but I'll ask anyway... can I get psyllium hulls at Walmart or my local grocery store? Barring that, is there any ingredient I can substitute for it? Gizmo wants a cracker. :clock: (Sorry, it's the only bird icon I could find.) :D

Here in Norway we can buy the psyllium hulls in grocery stores and also stores that sell healthfood.
I hope someone can tell where to buy it near you.

Whoopee! A friend needs me to take her the doctor in a nearby town, so maybe I can find the sesame seeds and psyllium hulls! Wish me luck!

And most of all I hope you all likes my crackers!
I ate two for breakfast with butter, egg, mayonnaise, tomato, red peppers and ham. A really tasty breakfast!:)

I did find them and will be baking them tomorrow! I assume you use a baking pan the size of ours. If not, I will make very thin ones.

Thanks again, I'll be the 'bird in the mine' and give a review. I do hope they are good as they sound, but in any case, thanks for sending us the recipe!
