Gosh Shanny, I don't really have a recipe, I'm not that organized. I just kind of use what I happen to have on hand that sounds good. For the sauce I use Bella Vita from Nutrition and add ground beef usually and just a bit of onion, bell pepper and garlic.
For meatballs I used this :
BAKED MEATBALLS - Linda's Low Carb Menus & Recipes

I don't remember the blog where the writer made the suggestion to put liver in them but these will work, just replace some of the meat with chopped liver. When I bake the nice round meatballs they kind of flatten out but they are still good. I freeze the whole lot and use what I need for each meal.
I'm sure others, like yourself, that are real cooks could do a much better job of coming up with a recipe. Like I said, I usually just throw stuff in a pot that sounds good and hope for the best.

First try with the Kitchenaid version of zoodles on Saturday. Might cook them a little longer next time, but pleased with the results.
