Default Low Carb Flaxseed English Muffins

I got the inspiration for this from another forum and tweaked with the recipe a little. What I came out with was an English Muffin that can be split and toasted. I can also see many uses for sandwiches and painnis. This is a work in progress and I have been adding different things everythime I make it. This is how I did it this morning



1 beaten egg
1/4 cup golden flaxseed meal
2 T almond meal
1/4 t baking powder
2 T chia seeds
pinch of salt
1 T melted coconut oil
splash of Davinci syrup ( I used dulche de leche flavor)
sprinkle of cinnamon


Beat egg in a small corningware dish ( 5.5 inches) . Add dry ingredients and beat well. Add melted CO and Davinci syrup and cinnamon. Pop in microwave for 2-3 minutes or until firm and bread starts to pull away from bowl. It should slide out real easy. I then sliced it with a bread knife and toasted it. I ate it with some Walden Farms Jam and organic butter. Boy was it good to eat bread again. Yesterday I made one for breakfast and bgs stayed close to 100 most of the day. So I guess my D body likes this too. I can see many ways you can change the recipe to make it sweet or savory. By adding other seeds or herbs you could even make a pizza base.

HumHum? Have you had a chance to try any of the low-carb wraps or various brands of thin buns? Some people can & some can't, but I've found I can have one-half a thin bun without spiking, and there's a low-carb/high-fiber wrap that I can have, if only one a day. After 60 years, I've had to learn I can't pig out anymore, and believe me - bread was the one thing I could always pig out on before.

You are SO right, François . . . we spent a week in the Bay area a few years ago & I ate so much of their chewy crusty sourdough that I sprung the muscles in my jaw & for a coupla weeks my teeth didn't meet right because those muscles were so tight. Talk about embarrassing!

You inspired me! Just made my first toasted cheese and onion sandwich since Dx. Mmmm... nice. I found my recipe online and it was a tad too buttery so I may tweak and try italian style with olive oil and herbs. Your recipe has more flax in it than the one I used so think I might try that next time. I didn't have golden flaxmeal as all I could get here was the standard but it still tasted good and oh the joy of toasting again!! Thank you for the recipe

Would this recipe lend itself to 'multiplying' and then baking in the oven in one of those "muffin top" pans?
