Marinated Garlic (Yum)
 
A friend of mine who is both diabetic and survivor of by-pass is also a caterer gave me some of her marinated garlic the other night and it was drop dead wonderful! She took some whole garlic buds (she used the peeled ones from Sam's) put them in a container and used about half and half olive oil and red wine vinegar and shook them up on her counter top for about 3 weeks. I started some yesterday. They would be a wonderful starter for the holidays coming up, so i thought some of you might want to give it a try for something savory, drained and served with toothpicks. We are betting the left over marinade would be a dynamite salad dressing too. She said she saw no reason one had to use red wine vinegar, but could use whatever one wanted. They were mild, but savory (which is my downfall over sweets).

Garlic is reputed to be very good for the heart, for what that's worth.

Please feedback if you give this a try!

I would assume the oil and vinegar takes away the bitterness. I'll have to try this. We do roasted garlic often and the roasting makes it taste so good.

I absolutely love garlic but can't stand olives or olive products. My wife and her family just look at me strangely when I remind them that I hate olives, olive oil, seafood, avocado and parma ham. They're Spanish. :)

You'll have to use a different oil for your marinated garlic cloves - wonder what would work well? Sesame oil?

Then be sure your in-laws don't polish off your stash! ;)

Agreed. Although I hate it, I do know that olive oil and garlic is a great combination. I don't know if any other oil would be as good to use as a marinade for garlic. Im also not a fan of balsamic or malt vinegars either so it makes creating a salad dressing a little tricky.
