Default Choco-coconut cookies, lower carb, NSA

1 1/2C almond flour
3/4C fine shred unsweetened coconut
1tsp baking powder
1/2tsp salt
1/2C softened butter
1 large egg
1/2C original (not 50/50) Splenda
1TB real vanilla
1/2C sugar free chocolate chips

Preheat oven to 350F. Line baking sheet with a Silpat or baking paper.

Combine first four ingredients and set aside. In a separate bowl cream together the butter and egg. Add in vanilla and Splenda. Add in the dry ingredients, mix, then mix in the chips. Use a tablespoon to scoop out 15 cookies and press down each a bit to flatten. Bake 12 minutes. They will lightly brown on the bottom, but not brown much on top. Cool and enjoy.

Notes: I used Lilly's brand dark chocolate mini chips. You could chop up an NSA or high % chocolate bar of your choice. Pecans or walnuts would also be a tasty add in.

These cookies are dry when first baked. Store them in a zip bag and they will soften up and hold together much better.

These cookies are not super sweet. Adjust the sweetener, more or less, to your liking. The coconut adds moisture, texture and a hint of yummy flavor.

It does sound delicious. But the almond flour, no can do (allergic).
If anyone knows of a substitute, please share.
