Easy Low Carb Frittata
I want to share something I make quite often that is super easy, tastes so good and can be varied for a variety of the same dish. :smile2:
Easy Low Carb Frittata
In a large skillet with lid, start by adding a bit of olive oil and butter. Add chopped onions/salt&pepper and cook until tender on medium. About 10 minutes.
If mushrooms are desired, add to the onion after about 5 minutes. Cook until tender. About 15 more minutes.
Steam some broccoli in microwave. Use florets, no stems. Place in glass dish, add 1/2 cup water, cover with plastic wrap leaving a corner open for stem to escape. Microwave high about 3-4 minutes for aldente, or more if you like softer broccoli. Drain off water.
Add broccoli to skillet. Add salt and cracked pepper to taste. Stir well. At this time you may add other steamed veggies or cooked meats (sausage, bacon, ham, chicken etc.)
After items in skillet are warmed through, place cheese if desired on top either grated or sliced. Turn down to low. While cheese is slightly melting, put 7-9 eggs in bowl. Add heavy (whip) cream (1/3 C) & salt and pepper. Use wire whisk or hand mixer to beat eggs 2 minutes.
Poor egg mixture over top of all in skillet. Turn heat back up to medium and cover with lid. Cook for about 15-20 minutes until sides and parts of the middle firm up. Turn on broiler to high in oven.
Remove from stove and if plastic handle cover with foil. Place skillet under broiler and cook with oven door shut for about 7 minutes or until top browns and all eggs appear firmed up. Don't over cook or under cook. Watch carefully during broiling.
Remove from oven. Let set 5 minutes. Will slice like quiche. Top with sour cream and chives if desired.
Cook bacon in same skillet. Remove bacon. Wipe some grease from pan with paper towels. Leave some bacon grease for flavor. Add some butter (2 TBLS). Then add onion/garlic other veggies. Add bacon after veggies are cooked.

Use your imagination and other ingredients you like to make it different each time. Other ingredients to consider.
Left over anything low carb

Don't waste that bacon fat on paper towels. Pour it into a container and save it in the fridge for another time.
Save bacon fat
Yes, if there is enough bacon fat to save then for sure put it in a container, however what needs to be dabbed up with a paper towel is the gritty part of the bacon that will not make a smooth finish on the Frittata. Just wipe enough so that it's clean fat and you get the crunchy drippings out of the pan. Usually just fry enough bacon at once to coat the pan for the Frittata and add flavor, like 5 pieces. That's how I do it anyway. :smile2:
