Default simple pancakes

I like something fast to prepare and have always loved pancakes. These work, for me.

2 eggs
2TBS coconut flour
1/2 tsp baking powder
splash of cream
1 pkt Truvia
desired flavorings (I used coocnut and almond, also have used vanilla and orange).

Mix in blender and pour into a generously buttered (or coconut oiled, or even bacon greased) pan, and flip when bubbly on top and brown on bottom ... I eat mine with davinci pancake syrup.

Sounds great. LC pancakes are one of my favorite meals and so easy. Actually my husband prefers LC pancakes.

Hey friends, your recipes are really very good. I am also diabetes patient and I will definitely try such food. It is better to eat daily food try some different recipes which are healthy and taste also.

I tried these this morning and with a bit more practice and tweaking for my taste buds these are really good! Thanks, Foxl. I have one of those tiny Cuisinart choppers (2 cups I think) and it worked just fine. I tossed my blender a couple of years ago in a clean out frenzy and really hate to buy a new one. I only used Green Leaf and too much vanilla, so I'll tweak and try again. I only got two...is that about right? I used about half a pack of the sweetener, but thought I would try less next time (maybe it was too much vanilla?).

Anyway, just wanted to thank Foxl for the recipe.

Can you use almond flour instead of coconut flour?

The answer to that is YES. I was careless and used it instead of the coconut flour.

These are seriously good!

Still working on the perfect pancake topping. Butter, flavored with sweeteners and real maple extract. (We always used real maple syrup, and I'm a spoiled brat.) I don't have the proportions down yet, but it's getting there.

I just had a piece of Marty's yeast bread (my new cornbread!) the way we ate it as kids, with butter & syrup. I'd have to say Walden's pancake syrup & a ton of butter melted into it made something darn near what I ate on my cornbread as a child.
