I use coconut flour, but only 1 Tbsp for a recipe. It sort of softens the texture. I also will add 1 Tbsp powdered gelatin, which helps holds moisture and keeps the bread from being dry.

I like the taste of the coconut flour. I'll try that thou VeeJay. Could have been that I was kinda of pretty hungry and had a few extra rashers of bacon too. I read that coconut flour is supposed to be good for BG , just wonder how correct that is

Pretty much lots of dates, goats, camels, and frankincense here Moon. None of which would be BG friendly in bread

Your meter would give you the correct information. My meter tells me that very much coconut flour is NOT good for my BG.

I made the bread Kazz, but it didn't work out as well for me. It's more flax than I perhaps was in the mood for, and the coconut flour does absorb a lot of moisture so it was dry. Now, disclaimer, I take medications that give me dry mouth and typically am on the prowl for moisture, so that could've had an impact. Second disclaimer, my coconut flour was way (way) past expiration - by how much I'm too embarrassed to say so won't

The good news is: I ate more fat because I piled on the butter and did enjoy.

Didn't test bg because I ate a small piece and ... was lazy.

Like you, I finished with sandwiches some time ago, but remember making a variation of oopsie bread and having a tomato/mayo sandwich. I'm thinking when I get some farmer's market heirloom tomatoes, I just might have one of those again ...

I did make another this morning. This time I only put 2 TBLS of coconut flour as VeeJay mentioned. The rest all the same and it's got a very nice consistency. I was in a hurry to have it ready for breaks so didn't experiment. I wonder too if me blending whole almonds into a "flour" helps the mixture as the almond flour is very moist. Checked BG an hour after and this time perfect so it must have been the 1/3 cup coconut flour it didn't like. I'm going to try grated zucchini in it next time for moisture. I had a favourite chocolate cake recipe that used zucchini and wow was that cake perfect! I wouldn't say my bread is dry when I make it but it could definitely use a little more moisture.
