Default Pocket Chicken Breasts

My mom cooked this for me the other weekend and it was fantastic. She got the recipe from San Francisco Encore Cookbook, The Junior League of SF, published by Doubleday 1986.

8 slices bacon
2T bacon drippings
1 large onion finely chopped
1 10 oz package frozen spinach, thawed and squeezed dry
1 egg, beaten
1/2 c bread stuffing crumbs*
1/4 c Parmesan cheese
1 T chopped pimentos
8 split chicken breasts boned
3-4 T butter
2 T oil

* Mom left these out and just increased the Parmesan cheese.

Fry bacon until crisp & drain. Crumble fine. Fry onion in bacon drippings until soft. Remove from heat and stir in spinach, egg, crumbs, cheese, pimentos and crumbled bacon. Mix together well.

Cut a pocket in the thick side of each chicken breast, making it as large as possible. Stuff with mixture and close with toothpick. Sprinkle with salt and pepper.

In large skillet melt butter and oil. Brown the breasts over medium heat for 12-15 minutes, turning frequently. Remove and drain on paper towels.

Sounds great!

I love chicken very much.... I'm newly diagnosed as type 2, so I need to eat less of it, I guess, but I love making cajun chicken pitas....

similar to, but I fry up a chicken breast in my home made spicy cajun seasoning, then fill a whole wheat pita shell with chopped chicken, romaine, parm, and Caesar vinaigrette.

I plan to make it tonight, but need to eat in moderation.

Sound s good. Check your BG before you eat it and then an hour and two hours after your first bite. Curious to know how the pita affects your BG. I'm seeing from 14 to 43 grams of carbs depending on the size. Does your cajun seasoning add any more?

Think I've had this since 2003. Told I was Type 2 lean on 2/13/12.

Hmmm.... I'll have to check all my cajun ingrediants, as well as the pita shell... I will check my BG ... just got a meter yesterday. My blood sugar was high this morning at 9.7 mmol/l and I looked it up and it might be related to dawn phenomenon I think. I plan to check it again in a bit.
