Something Different - Cream Cheese Muffins
 
I dont know who to give credit for this recipe but it was something different for breakfast for me.
Cream Cheese Muffins
8 oz cream cheese (softened)
1/4 cp splenda or equivalent
1 egg
1/4 tsp vanilla

Mix together. Beat with mixer until smooth.
Line muffin pan with cupcake liners.
Makes 6. Can be doubled
350 degrees for 10 -20 minutes
DO NOT LET BROWN.
There will be an indentioon in the center. Fill with whipped cream, SF jelly, sf syrup or whatever. I did the whipped cream with a blueberry on top.
Almost 0 carb each

They sound like the Oopsie muffins you do in the microwave. I never thought of doing them in the oven.

I've done the oopsies but this didnt require the folding the egg whites. I'm lazy. lol

These are the ones that Gizmo posted some time ago http://www.diabetesforum.com/diabete...e-muffins.html and have become a staple in my diet! I have them with a few berries and dollop of sour cream - yum!

I gave the link because Gizmo credits a long-running thread where people talk about their adaptations, etc.

I make a dozen, i.e. 2 8-oz pkgs of cream cheese, but use just one egg and like the consistency better. More like cheesecake to me. And, I make them in a silicone rubbery muffin pan - no greasing, no cupcake liners - so they pop out w/out falling apart.

Thanks Moon. Great idea about the silicone. Will pull that out.

I love my silicone pans and silicone baking liners. I don't know how I baked without them. I think this is definiely a recipe I will try.
