Default Creamy Collard Greens

This is a really old recipe from Fine Cooking Magazine, slightly modified over time. I use MasterCook to store all of my recipes, this is not their own recipe!

Creamy Collard Greens

Amount Measure Ingredient -- Preparation Method

1/4 cup Olive Oil
1 cup Onion -- Finely chopped
1 tablespoon Garlic -- chopped
1 1/2 cups Prosciutto -- Cubed
2 cups Chicken stock
2 large bunch Collard Greens -- 3 lbs.
2 cups heavy cream
salt & pepper -- to taste

PREPARE COLLARDS: Discard bottom hard stems. Rinse well. Roll several leaves together tightly and then cut into 1/4 inch strips. It will seem like an enormous amount but it will reduce and shrink in the cooking.

Saute onion in hot oil until soft -- about 5 minutes.

Add prosciutto cubes and saute 1 minute.

Add stock & greens and cook, stirring occasionally until tender -- about 15 minutes. You may have to add the greens in batches, and as they reduce, add more until all used up.

Add cream & cook until reduced and thickened.

Season with salt & pepper but when tasting, include a piece of ham or prosciutto which is very salty.

NOTES : This is an amazing dish of different tastes -- ending in mellow. The cream tames the collards. Can be made in advance and microwaved before serving.
