Default Coconut fried ?

I made coconut fried chicken tonight, i just rolled the chicken in unsweet cocnut, and fried in coconut oil. It was slightly sweet, very moist, and delightfully great! Yum!

Would never have thought to fix chicken this way. I'll have to give it a try.

It reminded me of the coconut chicken at the Chinese restaurants, only much less sweet. It was crunchy, but will burn easily.
