The worst problem I have with eating low carb is expecting a food to taste like my old favorites. Runny fried eggs are not pancakes, cauliflower mashed up is not potatoes. Once I get past that, I'm good to go. The foods I used to eat, should not be what my low carbs food have to measure up to. That's just a way of jumping off the wagon. I keep reminding myself.

True. I'm good with cauli-rice since it's a vehicle for other spicy things and fades into the background. And cauli-mash baked with bacon, chives and cheese, eaten with sour cream ... well, the cauli takes a back seat and tricks me.

Bread is something I've not had much success with. Sometimes I get excited at an effort, but invariably don't go back to it because nothing comes close to the bread of yore. But as you say, that's okay.

Surprisingly, desserts have been fine. I've been able to make some good ones and get the faux sugar balanced so guests can't tell it's not sugar.

What I remind myself is that the payoff is that I get to eat plenty of cheese, butter, fatty meats, etc that I didn't pre-dx when my diet was low-fat.

btw Blue Girl, that is one heckuva vat of apple butter on your profile page. I used to love apple butter! And chicken pot pie!

It's our community centers fundraiser. 30 gallon. We peel the apples and make the sauce, then spend from about 5:00m til dark stirring. You would be surprised how much it has brought our community together. We have a lot of fun.
We also have sugar free apple butter, for people. If we know before the final cook down, we dip some out for them. They add the cinnamon, when they open the jar. I like cloves in mine, but we only make cinnamon.
