Smile Simple Keto Pancakes

Found this in the Pyure stevia site, my brand of choice.

Instead of using five mixing bowls, a dozen ingredients and consuming countless calories, how about going for a two bowl, two ingredient recipe. Sound crazy? Well, it is crazy. Crazy delicious! *rimshot*
Simply mash two ripe bananas in a bowl, and combine with two whisked eggs. Then, cook as you would pancakes on a pan or flat top and voila – you have a naturally sweet pile of pillow-y goodness. If you’re looking for a little something extra, top it with Pyure’s maple-flavored syrup, made with organic stevia.
I am awaiting the Pyurex maple flavored syrup from Amazon. I have been craving pancakes for months. This is a recipe I can get down with.

Paleo maybe, Keto, I don't know. That would be my carb limit for the entire day.

Do you subtract Dietary Fiber from the Carb Count? I sometimes will do my whole allotment of carbs at one meal if it is something worth it and I am only going to be drinking bulletproof tea or coffee for the rest of the day.

Yes I usually do, but 29g carbs - 4g fiber is still 25g carbs, 83.3% of what I have as a target for the day. To make that part of a keto meal I would have to add 700 calories of fats and 200 calories of protein to go with that 100 calories of carbs to make it be a 70:20:10 / Fat:Protein:Carb ratio. Some of that would already be in the eggs in the recipe. Problem is, I can't handle that many carbs. at one sitting.

Smile Banana Pancakes

I guess I am going to have to figure out a way to make this work, whether by adding more butter to the mix, having additional fat bombs to the mix and having a 2000 calorie day, but I am having some banana pancakes.

I take into account that some carbs spike blood sugar, some don't, and sometimes combining them with things that slow down the metabolism of the carbs can spread out the carb effect over an extended period of time. Not everything I eat is totally efficient, some items are just for enjoyment.

If I ignore fresh veggies for a period of time due to the carb load, my body and or psyche will scream for them, so I have them and drench them in high fat dressing, which is also a high calorie item. I have to have my fresh veggies though. I love them.

Love banana pancakes so I have to make room for them somehow. I may end up eating and enjoying just one at a time.

That's the kind of treat that begs for some psychological tricks, like maybe making the pancakes "silver dollar" size so you can eat 4-6 of them with the same amount of batter as one big pancake, or putting the 'cake on a smaller plate.

1 large banana is almost 30 grams of net carbs so 2 bananas is more carbs that I eat in 3 days. I know people eat percentages in keto but if I go over 30g of carbs a day no matter what else I eat, my body kicks me out of ketosis.

I have not had a banana in 2 years... too much carbs for me unfortunately

I gave up on bananas and many other foods too. In last few months I eat less than 10 grams on net carbs a day.

You might try using very green bananas. It would lessen the effect on raising BG due to the starch being in a more resistant state than ripe bananas.

Not trying to talk you out of trying it. I would think eating this alone, just speaking for me, it would knock me out of ketosis, especially if I had it alone and only had bullet proof drink coffee the rest of the day. Might even knock me out even getting the macros even more keto for the meal, say 85:10:5, just because of the insulin response I think it would probably cause in me even if it might not drive my BG over 140.

Bananas kick my BGL into overdrive. This sounds lovely but not for me, alas (I'm drooling at the thought of it)
